The Principles

The question I get asked the most as a registered dietitian nutritionist is, “What is the ideal diet?” My answer is simple—there is none. We all need something different. We need different nutrients for different reasons at different life stages. So, where do you start then? Simply put, at the end of the day, I recommend that everyone starts with real food comprising whole, unprocessed, and unrefined ingredients. Outside of your personal dietary needs, there are some basic practices you can adopt to transform your food into medicine.

Finding Balance

In this chapter, I’ve highlighted some elementary yet significant nutritional information, including valuable details on vitamins and minerals, essential food groups, and inspiration for creating a balanced plate whether you’re an omnivore, vegetarian, or vegan.

Living Seasonally

When we override our natural rhythm, we suffer. Working night shifts long term with less exposure to sunlight, for example, has been linked to increased chronic diseases and illnesses, such as heart disease, gastrointestinal issues, weight gain, obesity, irregular eating habits, depression, and more. Or when we don’t honor the seasonal changes in our food system, both in farming practices and our diets, the environment suffers, and we can become sluggish and energetically stagnant. When we choose to live in the flow with nature and holistically support our health and happiness, we can thrive.

At Home In Your Kitchen

Creating a whole foods pantry is quite simple, and it will pay off tenfold in the long run. If you have an existing food pantry, allow yourself time to slowly transition from your current stock to more nutritious, whole foods by replacing one pantry category at a time. This is a fantastic cookbook which delivers healthy options on classic meals. I love how the recipes are broken up into seasons, making it easy to remember what fruits/vegetables are in-season. As an individual with specific dietary modifications, I really appreciate the variety of recipes offered for people of all diet types. As a working mother of two, I also love the meal plans offered in the cookbook. They're easy to follow. This cookbook has provided me with a newfound inspiration to cook. My all-time favorite recipe to date is the cashew butter stuffed dates with dark chocolate and sea salt. Carly Knowles knows how to offer recipes that are quick and satisfying. Thank you!

I purchased this book just a few weeks ago, and I've already made half of the recipes. It's become a staple in my kitchen. Carly clears up so much confusion about common food myths and misunderstandings, and gives easy to understand explanations backed by research and science. I now never have to wonder if soy is something I should be eating or not! I especially love that she includes something for everyone with a variety of gluten free and vegan recipes, which so far have been delicious. There's a salad recipe in there that calls for fennel, which I thought I didn't like, but let me tell you... because of this recipe I am now a lover of fennel. Get this book. You wont be disappointed.

It's a good book with excellent photography, but it does not give the calorie countof each dish as I had thought. I'm keeping it, but am dissapointed about that.

This book is outstanding! It was chock-full of the nutritional science behind healthy eating, but presented in a super accessible, down-to-earth way. I loved the seasonal division of recipes, and healthy, yummy spin-offs on old favorites; my favorite were the Chocolate Chai granola and Breakfast cookies (a big hit with my two kids who loved eating cookies for breaky!) This is a great resource to have on hand and in the cookbook collection!

In addition to the mulititude of varied and delicious recipes (which have even impressed my five year old daughter-no small feat lately) this beautiful cookbook provides all kinds of wonderful information on principles of whole foods such as seasonality and mindfulness, pantry essentials, food storage, and lessons on a balanced diet in pure and simple laymen terms. I loved Carly's refreshing thoughts on concepts such as body movement and aligning with the seasons. This cookbook is a beaut all around and deserves a spot in your kitchen.

This is a phenomenal (and beautiful!) cookbook. I knew it would be because I know Carly from working together in the rural village in Peru that she writes about, and she always made the most DELICIOUS meals and packed in as much nutrition as possible even with access to very few ingredients. The Nutritionist's Kitchen celebrates food as medicine, food as joy, food as connection to our friends, families, and communities - all things that feel more important than ever now. Loved all the recipes I've made so far and grateful for beautiful, healthy, seasonal meals that I can manage even during a busy day!

If you believe food is medicine, this is an excellent guide. It takes the guess work out of core nutrition principles and applies them for healthy eating and meal planning. This book provides the logic, science and recipes for optimizing your health with the right foods. I've tried a few of the recipes and they are wonderful. Keep this one in your collection.
